“Are You Kidding Me?” Carrot Soup

This soup is sooooooooo easy and soooooooooo good it’s a joke. There’s the “real version” and the “Karen Parry” version. The real version takes about 20-25 minutes of pre cooking prep and the Karen Parry version takes about 5-7 minutes. Either way…just make it already.

What you need:

  • 12 large carrots peeled and chopped roughly (KP version; unpeeled)
  • 2 medium sized onions diced small (KP version; chopped roughly into large chunks)
  • 4 cups chicken broth (KP always forgets this equals 1 litre)
  • 1/4 cup of butter (KP version; a dab of butter and some EVOO)
  • 1 cup Orange Juice (KP version; 3/4 cup of OJ and the juice of 1 orange because I use up the rind…might as well use the juice inside too)
  • Rind of one orange
  • Salt & Pepper to taste

In a large pot, heat/melt olive oil and butter. Add onions and sauté until they are nice and golden. Add the broth and the carrots and bring to a boil. Once the broth has begun to bubble, reduce heat to low and cover for about half an hour..until the carrots are super soft. Strain the broth into another bowl and set aside keeping the veggies in the strainer. Throw your carrots and onions into a Cuisenart or Vitamix and puree (you may have to do this in 2 batches). When the onions and carrots are smooth and lumpless put them back into the pot and add the broth. Stir gently and place back on the stove on a low element. Add the OJ and the rind and stir it all together. Add salt and pepper to your satisfaction. Scoop a bowl for yourself with a dollop of sour cream and a few finely sliced chives on top. Maybe some warm salty italian bread on the side? Dinner is served my friends and you painted your nails while preparing it…er no…that was me.
