Yes! I’m going to complete this 2014 – 52 Recipes resolution. Though it may be sporadic (2-3 recipes a week for a few weeks instead of one a week) I am bound and determined to complete this task. Here’s what I’ve made this week so far:
Last night my sister-in-law, Julia Smith, invited me and the boys up to her place for dinner. She’s been raving about this tasty yet simple salad so I was all over trying it out and let me just say…it was insanely delicious. I am posting it today because I will and am making it tonight for dinner so…another recipe done. RJ’s gonna be in heaven tonight (he’s joining me on this body transformation kick).
This is all you need:
- 1 Can Palm Hearts cut into small bite sized pieces
- 1 can of corn, or fresh corn or frozen corn thawed
- 1 – 2 Avocados cut into bite sized pieces
- 1 dozen cherry or heirloom tomatoes
- Small bunch of cilantro chopped finely
- Juice of 1 lime
- Salt to taste
Mix it all together and mow down my friends. Mow Down! I am not kidding you…this is a new regular in our house.

On Monday night I made a little something I found in my best girl’s cookbook. Her name is Ina Garten (Barefoot Contessa) and the cookbook is called How Easy Is That? It’s her Middle Eastern Vegetable Salad and it was super good. I added some gluten free rice for filler and some Tzatziki on the side as we had just two chicken breasts (my bad) between the 5 of us aaaaaaand I love Tzatziki.
I’ve got only 16 weeks left to do 30 recipes so I should fly. See ya!!!
I’d like to say that summer’s over but thanks to Christy Clark and a one sided government, my children are out of school for an undetermined amount of time. Boo boo hiss…
The reason I titled this “disclaimer” is because I have come to realize that journaling and documenting my weekly routine with regards to health, fitness and diet is crucial for my success. Journaling keeps me honest. So please, feel free to continue on the ever evolving journey with me if you wish…I love the company but I will not at all be offended if you decide or have decided to move on. I need this for my well being and so here I go again on my own.

So, since I turned 40 something has changed inside of my mind…or lets just say…it’s been altered. I read an article just one day after my birthday. I found it on http://www.stumbleupon.com and I regret not keeping note of the author because it resinated with me so much. What he/she spoke about was the fact that we all have the ability to be something great. To be able to succeed beyond our own expectations and to be happy and hugely successful. In order to achieve this, we need a few things to fall into place and those things were listed in the article. There were two points that stood out and I think about regularly to this day. Here is the gist of what they were:
- Know what you are passionate about. Everyone knows deep down what they love about life but because our culture is so busy keeping up with the Jones’ our own personal passions subside and sometimes vanish because we are chasing other peoples passions. We want what we think we should want because they want it. Get it? It made sense to me.
- Don’t care what people think. Without hurting people or intentionally stepping on others dreams to build your own…just do your best to not care. Everyone has an opinion. EVERYONE! If you hesitate pursuing something because of what others might think then you’re screwed. It would be almost impossible to turn your dream into a reality.
I’m all over #1. I know what I’m passionate about and good at and I think I’ve always known. My problem is I’m not entirely sure where to step first in order to be going in the right direction.
Now, #2 is a HUGE problem for me. This, my friends, is my biggest obstacle. I am waaaaay too concerned about what people think. I hold back all the time because I’m (putting it mildly) a pussy. I don’t care so much in my day to day life as I’m quite happy to have a laugh at myself and am very honest about who I am amongst friends and family but when I get serious about something and want to put my opinion out there or pursue a dream I start to freak out. Put my head in the sand.
Anyhoo…I have been working hard at caring less. Less about who, what, when, where & why. And I’m going to do my best in my 40’s to just be the best person I know I can be and I will hopefully be something really special by the time I float away. It’s never too late to start.

When I started this 2014 recipe a week thingy, I promised myself I wouldn’t put pressure on myself to do a “BIG” new recipe each week…just “A” recipe in order to make the mission sustainable for me. So this week, since I’m behind by a couple recipes, I’m going to post a few quickies to catch up. The summer is coming and that means people popping in for a visit on the reg, which means having some tasty, fresh, appetizers & snacks available on the spur. Sooooo, there’s no better time than now for testing out some yummy ideas.
Today, it’s Hummus. I tried a new recipe this weekend. I usually make the same one over and over but this one calls for a little kick and I liked it. It’s yet another gem from The Barefoot Contessa (follow her on Instagram @inagarten for some fab garden/Hamptons/foodie pics) and I’m gonna say GO FOR IT! Again, super easy and ridiculously short on time to prepare. I’m gonna do myself a favour and stock up on chick peas next time I’m in the bean aisle just so I have them available when I get a craving for it. Soooooo good.
